Optimization of the Number of Service Channels on the Example of Selecting the Number of Roller Mills in the Flour Production Process — Przegląd zbożowo-młynarski 2021-3

The article addresses the problem of evaluating the efficiency of bakeries in order to compare their performance and identify the best-performing units. The author shows that this issue belongs to the field of operations research, specifically Data Envelopment Analysis (DEA-CCR), which is used for benchmarking and efficiency measurement.

In the technical part, a mathematical model is presented that compares bakeries based on multiple inputs (e.g. costs, employment, infrastructure) and outputs (e.g. production volume, profit). The method uses linear programming models and systems of inequalities to calculate efficiency scores and determine relative performance among units. The analysis is supported by numerical data and computational tools .

As a result, the most efficient bakeries were identified, forming a benchmark group, while less efficient ones were shown to require improvement. The article demonstrates that DEA and linear programming as methods of operations research enable objective performance evaluation and support strategic decision-making.
