Evaluation of the Efficiency of Bread Stores Using Comparative DEA-CCR Analysis — Przegląd piekarski i cukierniczy 2021-7
The article addresses the problem of evaluating the efficiency of bakery retail shops in order to identify the best-performing units and improve weaker ones. The author shows that this issue belongs to the field of operations research, specifically Data Envelopment Analysis (DEA-CCR), which is used for comparative efficiency analysis.
In the technical part, a mathematical model is presented that compares multiple shops based on inputs (e.g. costs, employment, number of checkouts) and outputs (e.g. sales, revenue). The method uses linear programming models to calculate efficiency scores and create rankings. Additionally, the analysis includes super-efficiency models and optimization of resource structures for inefficient units .
As a result, the most efficient shops were identified, and recommendations for restructuring less efficient ones were provided. The article demonstrates that DEA and linear programming as methods of operations research enable objective performance evaluation and support managerial decision-making.
